If this is the wrong category for this, please move it, but I couldn't find another suitable place for fudge. :D

Chocolate Fudge

I got this recipe from my H's grandmother a long time ago. It's pretty good fudge!

1 package (6 oz) Hershey's semi-sweet chocolate pieces
1/3 cup PLUS 1 tablespoon Eagle Brand Sweetened Condensed milk.
Pinch of salt
1/2 teaspoon vanilla extract
3 tablespoons ground nut meats (pecans or walnuts), optional

Heat chocolate in top of double boiler over rapidly boiling water, stirring a few times, until just melted. Remove from heat.

Add Eagle Brand milk, salt, vanilla extract, and nut meats. Stir only until smooth.

Turn into container lined with waxed paper and press into block 1-inch thick.

Chill in refrigerator until firm, about 2 hours.

Turn out of container, remove waxed paper, and cut into serving pieces.

Store in airtight container.

Fudge Ecstasies

12 oz. (2 C.) semisweet chocolate chips
2 oz. (2 squares) unsweetened baking chocolate
2 Tbsp. butter
2 eggs
2/3 C. sugar
1/4 C. all-purpose flour
1 tsp. vanilla
1/4 tsp. baking powder
1 C. chopped nuts (optional)

In medium saucepan, melt the butter, baking chocolate, and half of the chocolate chips. Cool a little so you don't cook your eggs. Then add eggs, sugar, flour, vanilla, and baking powder, and stir until thoroughly combined. Stir in the rest of the chocolate chips, and nuts if desired. Drop by rounded teaspoonfuls 2" apart on greased cookie sheets. Bake at 350*F for 8-11 minutes or until edges are firm and surfaces are dull and cracked. Cool on wire rack. Makes 30-36ish.

Toffee-Studded Snickerdoodles

1/2 C. (1 stick) butter, softened
1/2 C. shortening
1 C. sugar
2 eggs
2 3/4 C. all-purpose flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
1 1/3 C. (8-oz. pkg) toffee bits
6 Tbsp. sugar
2 tsp. ground cinnamon

Stir together cinnamon and 6 Tbsp. sugar in small bowl; set aside. Beat butter, shortening and 1 C. sugar in large bowl until fluffy. Add eggs; beat thoroughly. Stir together flour, cream of tartar, baking soda, and salt; gradually add to butter mixture, beating until well blended. Stir in toffee bits. Shape dough into 1-1/4" balls, roll in cinnamon sugar, and place on ungreased cookie sheets. Bake at 400*F for 9-12 minutes or until lightly browned around edges. Cool one minute, then remove to wire rack and cool completely.

Oatmeal Choc Chip Squares- makes a huge pan full.
1 1/2 c. br sugar(I use less, aprox 1 1/4)
3/4 c sugar(2/3)
1 c short( I use applesauce + 1 tab of oil)
3 eggs
1 tsp vanilla
2 1/4 c flour sited with 1 tsp bake soda,1 tsp salt, 1 1/2 tsp cin
3/4 c oatmeal
4 c. oats
1/2 pck of choc chips(think it would be about 1 c)
Cream sugars+ shortening, add eggs and vanilla . I just dump it all into my large Kitchen Aid stand mixer and let it beat.
Add flour to mixture with the milk, then add oats and choc bits-it will be semi-stiff.
Spread into greased jelly roll pan plus another smaller cookie sheet pan ,or 1 really large (called 1/2 sheets) baking sheet.
Bake 350 degrees for 30 min. Cut while warm, cool in pan .

These are fantastic! Very moist and yummy. I'm definatly going to be making large batches of these for the freezer and future breakfasts.
My alterations are in red
3 mashed bananas (ripe) I only had two and they were not overly ripe
1/3 cup apple sauce I added a bit more to make up for lack of third banana
2 cups uncooked quick-cooking oats
1/4 cup skim milk I had whole milk
1/2 cup raisins (or any other dried fruit you want to add)
1 tsp vanilla
1 tsp cinnamon
1 tbsp Splenda , sugar or other sweetener I used sugar

Preheat oven to 350 degrees. Mix all ingredients in a bowl really well. Let this mixture stand for at least 5 minutes to let the oats become good and hydrated. Heap the dough by teaspoonfuls onto a greased cookie sheet. Bake for 15-20 minutes and let cool. My oven has a speed bake option, I used that and it took 15 minutes. I would imagine in a standard oven it will probably take the full 20. The cookies do not spread out in the baking process, so if you want nice flat cookies, press them lightly before cooking. I forgot to grease my pan in between batches, the second batch did stick a bit. This recipe made 18 cookies using a table spoon to drop.

These are yummy ,you wouldn't believe there's only 2 tab of oil in them

Quaker Raisin Spice Cookies/Bars

1 c marg ( I use applesauce,just add 1-2 tab of oil )
1 c brown sugar
1/3 c reg sugar
2 eggs
2 tab milk
2 tsp vanilla
1 + ¾ cup flour sifted with 1 tsp baking soda, ½ tsp salt, 1 tsp cinnamon, and ¼ tsp nutmeg
2 and ½ c reg rolled oats ,

Cream eggs, marg, and both sugars together ,add milk and vanilla. Add flour, oats, raisins . Dump onto large ,greased jelly roll pan, bake at 350 degrees for aprox 25-35 mmin. Check with toothpick. Cut while warm . Freezes well.
Can make these as drop cookies also - drop and bake 9-10 min .

I haven't tried these, but everything else from this book has been great. Bun on the Run is a favorite bakery/lunch spot in Fairbanks, Alaska.

Deb's Peanut Butter Cookies (gluten free)

This is a fabulous wheat-free recipe that seems to defy all logic. You'll have to try it to believe it!
Preheat oven to 350 degrees.

Cream thoroughly:
2 c. chunky peanut butter
1 1/2 c. sugar
2 tsp. vanilla

Add and mix thoroughly:
2 eggs

Lightly grease two cookie sheets or line with parchment paper. Scoop out cookies using a medium scoop and, using a fork, press cookies down slightly, creating a criss-cross pattern. Bake until light golden, 12-14 minutes. Allow to cool on sheets for 10 minutes and remove to cooling rack to cool thoroughly. Makes 20 3 1/2 inch cookies.

As promised:

Sunflower Raisin Cookies ... n-cookies/

The recipe:
3/4 cup whole wheat flour
1/2 cup wheat germ
2 Tbs dry milk powder
1/2 tsp baking soda
1/2 cup butter (softened)
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1 cup raisins
1/2 cup sunflower seeds
1/2 cup peanuts (chopped)
1. Mix together whole wheat flour, wheat germ, dry milk powder, baking soda, and set aside.
2. Cream butter and brown sugar together until light & fluffy; mix in egg and vanilla. Stir in dry ingredients.
3. Drop by rounded teaspoons on baking sheets. Bake in preheated oven at 350F for 10-12 minutes.
Servings: 24

I did not have dry milk powder - and it was fine without.

Carrot Cookies

1 cup butter (softened)
3/4 cup sugar
1 1/2 cup carrot, shredded
1 egg, beaten
1/2 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 cup powdered sugar
2 Tbs orange zest
1/4 cup orange juice
1. Beat together sugar and butter.
2. Add carrot, egg, vanilla and mix well.
3. Sift together flour, baking powder, and salt and then mix with the rest of the ingredients. Drop by teaspoons on ungreased baking sheets and bake in preheated oven at 375F for 10 minutes.
4. Optional frosting: Mix powdered sugar and zest together with enough juice to form a spreading consistency.
Servings: 48

I made it with 1 cup Spelt flour/1 cup All Purpose.

The Healthified version had
Tahini instead of Butter
and Coconut Sugar instead of powdered Sugar. - It tastes different but it is a good cookie. :D

granola bars - sort of a cookie, but not so sweet

Found it

Granola bar recipe from Super mama ( She boards)
CC- clarifying the recipe. I knew it didn't sound quite right but went from memory. I dont find it too sweet if you use nuts and grains and not choc chips.I do like the dried cranberries in it.
It is
Granola Bars
4 cups oatmeal
5 cups of individual ingredients
1 can sweetened condensed milk
CC- I press it onto a cookie sheet. It is quite thin. Maybe about 1/2 inch

Bake at 350 20 min or til golden brown. Cool, break into pieces

I changed it a bit (of course :roll: ). I bake it at 325 ,take it out after 20-25 min, let it cool a bit then try to cut inot squares.
I use dried cranberries, walnuts, a bit of coconut flakes, raisins, crushed cereal(raisin bran type or whatever is on hand), peanut butter chips and a couple squeezes of maple syrup .
