Any other low-carbers out there? How about people trying low-carb eating? Perhaps we can share our experiences and recipes? Hints and suggestions would be great too. :D

I'm back doing an Atkins type low-carb eating regimen. Is anyone else out there doing low-carb? Regular or Induction?

Breakfast:

- 2 turkey sausages & a hard-boiled egg
- caved and had 2 donuts with DH :( :shock: :(

I have times when I try to eat low-carb for dinner, so I'm always on the lookout for new recipe ideas that aren't just "salat with cut-up chicken breast". I'll be checking in every now and then.

It depends on how simple or complex you want your meals to be. I usually go with simple.

Hi Suzee, I'll join you starting today 12/26.

I have 25 pounds to lose! I'm tired of losing and gaining back the same 5 pounds!

I will be doing Adkins Induction. I am going to try to eat eggs for at least 2 meals every day because I have read that eggs helps you get in ketosis faster.

I couldn't sleep (anxiety issues) it's 3:30 a.m. and I'm drinking a low carb shake (2g of carbs).

Hi Jenny. I'll probably be here once or twice a day.

I will be doing the induction, too. DH thinks he's coming down with the flu and I'm fighting off something.

Breakfast was 2 turkey sausage links and a hardboiled egg. Lunch was chicken and some broccoli.

I understand the sleep thing. Been dealing with it for years. How are you doing today?

Thanks for starting this, Suzee! (((Hope you and dh feel better))). It's a great idea to put ideas in one place and share with others. I love seeing new recipes as I get so tired of menu planning and usually wing it when it comes to meals. I need to plan ahead and keep it healthy, low carb will work perfectly.

Good luck, Jenny! I won't be doing the full low carb plan but focused on eating better.

I'd like to do better with breakfast, right now we eat junk (cereal, pop tarts, toast...) and I feel bad that the girls aren't getting as healthy a start as they could/should. This sounds good and could be changed up by swapping out meats, adding veggies, etc. :

Protein-Packed Breakfast Burritos
Serves: 12-14
Ingredients
1.25 lbs. ground turkey
1 packet taco seasoning
1 (15 oz.) can black beans, drained and rinsed
1 (10 oz.) can Rotel tomatoes
2 cups spinach
5 eggs, beaten
5 egg whites
1/4 cup milk
1 tsp. salt
1/2 tsp. pepper
1 c. shredded cheddar cheese
12-14 whole wheat tortillas
Instructions
Brown turkey until no longer pink; season with taco seasoning.
Add black beans and tomatoes; mix well.
Over medium heat, saute spinach until just starting to wilt.
In a small bowl add eggs, egg whites, milk, salt & pepper.
Add egg mixture to spinach; cook until scrambled, stirring constantly.
Add egg mixture to turkey mixture; mix well.
Add a heaping 1/2 cup to a whole wheat tortilla. Top with 1 tablespoon of shredded cheddar cheese. Fold & repeat.
Can be wrapped individually and frozen. To reheat, unwrap and place in the microwave for 90 seconds, flipping over half way through.

We actually are not sick. I think it was a light case of food poisoning from yesterday. These things happen. DH is better this evening.

Breakfast: quiche
Lunch: hamburger
Dinner: small amount of spaghetti sauce over broccoli

Lots of water and 2 diet cokes.

Not a real stellar beginning...but a beginning. :mrgreen:

Dinner: not real hungry...yogurt

Linda's Low Carb Menus are great!

I have found a few recipes on another forum for cream cheese muffins and a mock brownie danish. They're addicting. :mrgreen:

I've really had to watch myself around baked goods, including bread, cereals, grains, beans, rice...all have carbs. Some vegetables have high carb counts. And any fruit is almost a nono. Some berries are okay, AFTER ketosis. It is frustrating sometimes, especially when DH is eating 4 pieces of toast or having a piece of candy, popcorn, etc.

My basic induction/ketosis menu:
- Breakfast: 2 slices bacon (I use turkey or regular) with one or 2 scrambled eggs. I use a spray oil, or coconut oil, sometimes butter.
- Lunch: A protein, with fat (mayo, dressing or oil), and 1 cup lettuce.
- Dinner: A protein with 3/4 cup veggies & butter. (no-carb veggies. Corn, peas, potatoes, etc...have a lot of carbs. Look it up.)
*Snack between breakfast and lunch & between lunch and dinner...cup of tea each time.

My nutritionist suggested, after ketosis:
Sodium: 2400 mg daily Carbs: 110 g daily
Calories: 1400 mg daily Water: 80 oz. daily

Breakfast: Between 6 & 7 AM - 250 calories & 15 - 20 carbs
-- 2 protein choices, i.e.: 1 egg & 1 oz. cheese OR 1/2 cup cottage cheese & 5 oz. fruit (fruit 80 calories/15 g carbs.)

Mid-morning snack: 9 AM - 150 calories & 15 g carbs
example: 1/4 to 1/8 cup hummus & 1 cup lowest carb veggies

Lunch: between Noon and 1 PM - 400-450 calories & 30g carbs
-- 3 - 6 oz. protein, i.e.: 3 oz. beef = 210 calories
4 oz. chicken = 200 calories
6 oz. fish (white like albacore tuna in water) = 100 calories
-- 1-2 cups veggies (lowest carb or no-carb veggies)
-- 1/2 cup healthy starch i.e.: pasta, beans, corn, peas, rice, quinoa

Mid-afternoon snack: between 3 & 4 PM - 120 calories & 15g carbs
-- Option 1: 3 tbsp. pecans and 1/2 cup berries (lowest carb berries)
-- Option 2: 2 oz. tuna (1/3 can) & 100 calories of crackers

Dinner: 6 PM - 400 - 450 calories & 30 g carbs
-- 3-6 oz. protein (see lunch menu)
-- 1-2 cups veggies (10 g carbs)
-- 1/2 cup starch (see lunch menu)

After Dinner Snack: zero calorie beverage or water

***Please remember, I am NOT advocating that anyone else should do either of these particular menus. These were suggested for me. This can give you an idea of what it is like.***

Okay...things have settled down and it's time to get down to it. Tomorrow I see the wellness coach, and I'll have an idea of what to tweak in my eating. Update later tomorrow.
